BAKED TROUT

Clean trout, leaving head and tail on.

Season bread crumbs with plenty of salt and pepper or other seasoning as you wish.  Lemon pepper is a good choice, as is Tony Chachere's Original.  Dip whole fish first in milk, then in the seasoned bread crumbs.

Place in greased baking dish and dot with butter.  Bake at 400 degrees for 10 min. until flaky.
